So I've been really hungry this week, and i need something different from the proverbial rice and everything rice ( had a lot of those last week ). Anyways and i thought why not make porridge... but what kind? as it turns out I've not had plantain porridge in a long time and i love me some plantain porridge ( My sisters go to food, she can never get enough ) and then i stumbled on this recipe and as usual decided to share.. who wants some plantain porridge? lol i know you do
Unripe plantain gives our body iron, so you can use an unripe plantain or semi ripe plantain to create this delicious delicacy. For this recipe a semi-ripe plantain was used, remember that this is a really healthy meal and a balanced diet with all the vitamins involved. Another health tip is that Plantain is the source of potassium which helps our muscles function normally and regulates our heart beat.
What You Need:
2 fingers of semi-ripe Plantains
1/2 cup of chopped shrimps
1 cup of shredded spinach (substitute with green or ugwu)
1.5 cooking spoons of blended red bell pepper
1 yellow pepper (optional)
1 red scotch bonnet pepper ( if you love pepper make that 2)
A handful of chopped onions
A handful of crayfish pieces
Seasoning cubes
2 cups of water
1/2 teaspoon of chilli powder ( i love pepper so i would be doing more than that )
Salt to taste
Shredded Smoked Fish
1.5 cooking spoon of Palm Oil
How To Prepare:
Peel the plantain and cut to desired shape in smaller pieces and place in a pot.
Add the onion, pepper, salt, seasoning cubes, blended bell pepper and water and bring to boil.
Check to see if the plantain is soft. (Stick a fork in one of them and if goes through easily, then its ready)
Add the crayfish, shrimp and shredded smoked fish and leave to simmer for 5 minutes on lower heat. If the liquid is drying up, add 2 cooking spoons of water.
Pour in the palm oil and stir. Stir in the vegetables and serve hot.
mmm so delicious i can taste it already.
